These black Kalamata variety olives are hand picked on the Colonna estate in Molise and preserved in brine. The polyphenol levels of these olives remain unchanged after processing, giving them their characteristic, slightly bitter taste. Ideal as starters, they are also terrific with pasta dishes and other meals. Rinse before use and keep in the fridge after opening.
